Traditional Bhoona Preparation

Method
  1. Heat the pan and pour in the oil.
  2. Add chopped garlic when the oil is hot and add the chopped onion when the garlic is brown.
  3. Sauté for approximately 2 minutes until the onions soften and the oil begins to separate. Next, add the fresh green chillies and chopped tomatoes with a pinch of salt, stirring thoroughly to combine the authentic flavours.
  4. Place all the ground spices in a small bowl, add a little water and mix it into a paste. Add the paste to the onion and stir well ensuring it doesn’t set at the bottom.
  5. Add the leftover turkey and stir for a few minutes to mix well.
  6. Finally, pour in around 50ml of water, cover the pan, and allow the curry to gently simmer on a low heat for 5 to 7 minutes. Stir occasionally to ensure the vibrant spice blend does not catch on the base of the pan.
  7. Simmer on low heat until the turkey is well covered by the spices.
  8. Remove from heat and sprinkle the chopped coriander.
  9. Serve piping hot alongside fluffy steamed basmati rice or freshly baked naan bread, or enjoy it as a magnificently spiced sandwich filling.
